Veggie Stuffed Taters


1 cup milk

1 tablespoon cornstarch

1/2 teaspoon dry mustard

1/2 teaspoon salt

1/8 teaspoon black pepper

3/4 cup mozzarella cheese -- shredded

2 cups frozen mixed vegetables -- thawed

4 medium baked potatoes

In a small saucepan, combine milk, cornstarch, mustard, salt, and black pepper. Cook and stir until thickened and bubbly. Add cheese, stirring until melted. Stir in vegetables and heat through. Slice potatoes down the center and scoop out half of the insides of each. Mix the removed potato with the vegetable mixture. Spoon the vegetable mixture into the potato jackets, mounding each slightly. Serve warm.

Note: since you have to let the potatoes cool enough to handle them to scoop out the inside, you might want to microwave the assembled potatoes for 1 minute to reheat.
