Sauteed Potatoes with Garlic-Olives

Spicy Oven Baked Fries


1 1/2 pounds baking potatoes peeled -- cut in strips

1 tablespoon canola oil

2 teaspoons chili powder

1/2 teaspoon salt

1/2 teaspoon dried oregano

1/4 teaspoon garlic powder

1/4 teaspoon ground cumin


Preheat oven to 450F degrees. Combine oil and remaining ingredients. Add potato strips and toss well. Arrange potatoes in a single layer on a baking sheet. Bake for 15 to 20 minutes or until golden brown.

Seasoned Oven Fries


2 medium baking potatoes

1 tsp. seasoned salt

2 Tbs. olive oil

Vegetable cooking spray

Wash potatoes and cut lengthwise into 8 wedges (peel them if you prefer; I don't). Cover with cold water with a dash of lemon juice added (to prevent potatoes from discoloring) and soak at least 30 minutes. Pat potatoes dry. Place, skin-side down on baking sheet sprayed with cooking spray. Brush oil generously over potatoes. Sprinkle with seasoned salt. Bake at 400 degrees for about 50 minutes.

Snazzy Fried Potatoes


Peel and dice potatoes into cubes about a quarter of an inch square. Rinse off all potato starch with running cold water. Put potatoes in a pot and cover with boiling water and let stand for a few minutes....drain well.

Fry potatoes in a bit of hot oil until nicely browned

Grate some onion and add to the potatoes along with any onion juice produced.

Salt & pepper to taste.

These potatoes are not heavy and not greasy and slightly crunchy.

Sour Cream Potatoes (Hash Browns)


2 lb Frozen hash browns,thawed

8 oz Cheddar cheese,grated

1 cn Cream of chicken soup

1 lg Carton sour cream

1 ts Salt

1 Onion, diced

Garlic salt to taste

2 c Cornflakes,crushed

1 Stick margarine or butter

Mix all ingredients together except for cornflakes and butter. Place in large casserole and bake @ 350 degrees for 45 minutes. Remove from oven.Top with cornflakes and butter or margarine. Return to oven and bake 15 minutes longer.

Special Company Casserole (Hash Browns)


2 pounds Frozen Hash Browns

1/2 cup chopped onions

1 can Cream of Celery Soup

1 can Cream of Chicken Soup

1 8 ounces car Sour Cream

2 cups graded cheddar cheese

Let potatoes thaw. Combine all ingredients except for one cup of the cheddar cheese. Put potato mixture in a well greased 9xl 3 pan. Top with remaining cheese. Bake for 1 & 1/2 hours @ 375 degrees.

Spicy Hash Browns


25 lb Potatoes -- peel, cook tender, drain -- chill, grate

2 1/2 lb Ham -- dice

2 1/2 lb -- onions -- chopped

2 1/2 lb Green peppers -- chopped

1/2 lb Fresh jalapenos -- chopped

1 c Butter -- divide

2 Jars pimientos -- drain, chop, 4 oz ea

10 ts Salt

5 ts Pepper

2 1/2 ts Cayenne

2 1/2 ts Paprika

2 lb Cheddar -- shred

Saute ham, onions and peppers in 1/4 cup butter until tender. Cool 10 minutes; add to potatoes. Add pimientos and seasonings; mix well. On a griddle, cook potatoes in remaining butter until browned; turn over and cook the second side until browned. Place half of the potatoes on a platter; top with cheese and remaining potatoes. Spam Hashbrown Bake


1 pk frozen hashbrown potatoes, thawed slightly (32 oz)

1/2 c butter or margarine, melted

1 t salt

1 t pepper

1/2 t garlic powder

2 c shredded cheddar cheese

1 can SPAM Luncheon Meat, cubed (12 oz)

1 can cream of chicken soup (10 3/4 oz)

1 1/2 cup sour cream

1/2 cup Milk

1/2 cup chopped onion

1/4 cup CHI-CHI's Diced Green Chilies, drained

2 cups crushed potato chips

Heat oven to 350'F. In large bowl, combine potatoes, melted butter, salt, pepper, and garlic powder. In another bowl, combine cheese, SPAM, soup, sour cream, milk, onion, and green chilies. Add SPAM mixture to potato mixture; mix well. Pour into 2-quart baking dish. Sprinkle with potato chips. Bake 45-60 minutes or until thoroughly heated.

Sweet Mollies (Potato Chips)


2 1/4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 cup butter -- softened

3/4 cup granulated sugar

3/4 cup brown sugar

1 teaspoon vanilla

2 eggs

12 ounce pkg. butterscotch chips

6 1/2 ounce pkg. regular potato chips* -- finely crushed


Combine flour, baking soda and salt in small bowl. Beat butter, both sugars and vanilla in large mixing bowl. Add eggs, one at a time, beating well after each addition; gradually beat in flour mixture. Stir in butterscotch chips and potato chips. Drop by rounded teaspoon- fuls onto ungreased baking sheet. Bake in preheated 375F degree oven for 9-11 minutes or until golden. Let stand 2 minutes; remove to wire rack to cool completely. Makes about 5 dozen cookies

Smothered Cajun Hash Browns


Vegetable oil

5 lg Potatoes peeled and cut in 1 Cm cubes

2 cups md Onions finely chopped

md Capsicum finely chopped


Cayenne pepper

2 tsp Ground black pepper

1 Tsp Ground white pepper

2 Cups Chopped green onions

1 Cup Freshly chopped parsley


Heat oil in a large heavy saucepan over medium heat until it begins to smoke. Cook potato in small batches until golden. Remove from oil and drain on absorbent paper. Remove oil from pan. Add onion, capsicum, tabasco, cayenne, peppers, 2 cups water and 1tbsp salt, mix well and bring to the boil. Reduce heat, cover and simmer over low heat for 15-25 mins, stirring occasionally, or until potato is tender. If there is liquid remaining, uncover pan, raise heat and cook until liquid evaporates, stirring constantly, being careful not to break up potato. Sicilian Potato Bake (Hash Browns & Mozzarella)


24 ounces hashed brown potatoes -- divided

1 small thinly sliced onion -- divided

2 thinly sliced tomatoes -- divided

8 ounces shredded mozzarella cheese -- divided

1 1/2 teaspoons beau monde seasoning

1/4 teaspoon pepper

1 teaspoon oregano

1/2 cup milk, 2% lowfat -- added last

Prepare a shallow 6 cup casserole with a little margarine or spray oil. Layering in order listed - - - place first 7 ingredients in casserole; use half the amounts for the first 4 ingredients (those marked 'divided'). Then layer the remaining amounts of the first 4. Pour milk over top. Cover with foil, but loosely, so steam can escape. Bake 425oF for 25 minutes. Remove foil. Bake 5 more minutes. Remove and let stand a minute or two before cutting.

Beau monde is a seasoning salt whose main component is celery salt. Use lawry's, mrs. dash, etc. Substitute O'Brien potatoes. Good with lowfat buttermilk!

Serves 6 to 12, depending upon menu.

Sauteed Potatoes with Garlic-Olives


2 lb russet potatoes

2 cloves of garlic, minced

3 tb olive oil

1 tb chopped parsley

1/4 cup chopped oil cued ripe olives

1 dash nutmeg

salt and pepper to taste 1/4 c oil cured ripe olives chopped saute 2 pounds scrubbed and thinly sliced russet potatoes,blotted to absorb surface moisture,in 3 tablespoons hot olive oil.tossing ocassionally until tender,about 20 minutes.season with salt an pepper and a dash of nutmeg as you saute.toss with 2 minced cloves of garlic,1 tablespoon chopped parsley and 1/4 cup chopped oil cured ripe olives at the end of cooking.
